Serves: 12-14

Bake time: 13 Minutes
Ingredients
1 cup butter, room temperature
1/2 cup granulated sugar
3 tablespoons powdered sugar
2 large egg yolks
1 teaspoon vanilla extract
1 teaspoon almond extract
2-1/2 cups flour
1/2 teaspoon salt
1 jar strawberry jam (250mls)
Icing:
3/4 cup powdered sugar
2-3 tablespoons milk
Directions:
In a bowl, whisk the butter, sugar, and powdered sugar together on high speed for 2 minutes, until light and fluffy.
Add the egg yolks, vanilla extract, and almond extract. Mix for 1 minute, until fully combined.
Add the flour and salt. Mix until a soft dough forms.
Line a baking sheet with parchment paper.
Using a small cookie scoop, scoop dough and roll into balls. Place each one in rows on the prepared cookie sheet.
Using the back of a teaspoon, gently press an indent into the center of each dough ball.
Fill each indent with strawberry jam (no chunks).
Place the baking sheet in the freezer for 25 minutes.
Preheat the oven to 350F and bake for 13 minutes.
Transfer cookies to a wire rack and allow them to completely cool.
In a small bowl, whisk together milk and powdered sugar. Drizzle the icing over each cooled cookie.
Serve and enjoy!
