Serves: 6

Prep time: 15 Minutes

Bake time: None

Ingredients

  • 3 cups all-purpose flour

  • 2 tablespoons baking powder

  • 1/2 teaspoon salt

  • 2 tablespoons granulated sugar

  • 2 eggs

  • 2-3/4 cups milk

  • 1/2 cup melted butter

  • 1 teaspoon vanilla extract

Directions:

  1. In a large bowl, whisk together the flour, salt, baking powder, and sugar.

  2. In a separate bowl, whisk together the milk, eggs, vanilla extract, and melted butter.

  3. Make a well in the center of the dry ingredients and pour in the wet ingredients. Whisk gently until combined - do not over mix.

  4. Preheat a non-stick pan or skillet on medium-low heat. Lightly grease vegetable oil and scoop about 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on top and the edges are set, flip the pancake and cook until golden brown on the other side. Transfer to a plate and keep warm.

  5. Serve with maple syrup, butter, fruit, whipped cream, or any toppings of your choice. Enjoy!
